Yummy fruity chicken breasts with tomatoes, mushrooms and basil

This recipe with chicken, tomates and basil brings you a taste of summer all year long!

What you need (2 servings):

  • 2 chicken breasts
  • 1 can of lumpy tomatoes
  • 300gr mushrooms
  • oil for frying
  • basil (frozen, 1-2 tsp)
  • noble sweet paprila
  • salt and pepper
  • parmesam cheese


Wash and slice the mushrooms as well as the chicken breasts. Spice the chicken breasts with salt, pepper, and a lot of paprika so they get a nice color. Heat some oil in a smaller pan, add the mushrooms and spice them with some salt and pepper. In a bigger pan, also heat some oil and sear the chicken breasts. If the meat is well fried allaround, reduce the heat and let the meat cook until its ready. Along the way, mix the mushrooms from time to time. At the end of the cooking time, add to mushrooms to the meat as well as the basil and the tomatoes. Stir and let everything heat up carefully.

Arrange the dish on a plate and put some parmesan cheese on top. You may enjoy this dish with italien noodles, rice or just some fresh baguette. Enjoy!
